GRILLED - CORN AND TOMATO SALAD
4 Servings . Prep: 10 - 15 mins. . Grill: 8 -10 mins.
3 pcs of corn on he cob,shucked Preheat grill to medium. grill the corn, turning
1 cup quartered cherry tomatoes often, until it is lightly colored and has grill marks,
l/2 red onion, julienned cut about 8- 10 minutes. Remove the corn from the cob.
1/2 cup ribbon-cut Basil Gather all of the ingredients except the Salt and
1/4 cup extra -virgin olive oil Pepper together in a mixing bowl, and lightly toss to
1 lemon, juiced coat with the lemon and extra - virgin olive oil.
Salt and Pepper to taste Season with Salt and Pepper to taste, and Serve.
